Toast is my current favorite. I love toast. Bread is the staff of life because bread is super tasty plus you can feel like you are a gourmet cook and honestly all you did was make toast with a fancy topping. We ate this for brunch today and it was next level, even on gluten free bread!
Balsamic Heirloom Tomatoes on Toast
2-3 medium/large heirloom tomatoes
OR 2 pints of mixed cherry tomatoes
2-3 leaves of fresh basil
1 large clove of garlic
Scallions or shallot, thinly sliced (optional)
Balsamic vinegar
Sea salt & pepper
Directions: Dice the tomatoes into a smallish pieces, you want it to have the texture of a very, very chunky salsa. I used cherry tomatoes here and chopped each one into quarters. Chop the basil. Run the garlic through a garlic press. Mix everything together with salt and pepper (and sparing use of shallots/scallions, optional) to taste. Add a splash of balsamic vinegar and let sit in the fridge for an hour to overnight. Serve on toasted baguette or bread. Serves 2 people.
Optional: You can add olive oil to this but honestly I don’t think it needs it. I almost always make this without onions for a sweeter dish.
